Healthy Black Bean Burrito


Boil brown rice until tender. Drain, and in a large bowl, toss fresh cilantro with rice, and drizzle with lime juice. Pour in skillet with 1 Tbsp. olive oil and heat for 3 minutes.
Rinse soaked black beans and place aside. In a separate, large skillet, saute onion and garlic in 2nd Tbsp. of olive oil until onion is soft. Reduce heat to medium low and add black beans with remaining ingredients. Stir until heated through, about 5-10 minutes. Spoon finished mixture and rice into tortillas. Add any desired additional toppings: organic salsa, avocado, or olives. Wrap into burrito and serve hot.
