Pomegranate Champagne Cocktail
- 1 cup Champagne, chilled
- 1 ripe pomegranate (for juicing)
- 1/2 cup fresh-pressed clementine juice
- 4 tsp limoncello liqueur
- 2 tablespoons fresh-pressed lemon juice
- 2 rounded tbsp raw organic coconut sugar
Cut the pomegranate in half, setting a few seeds aside for later garnishment. Then press enough pomegranate to yield 1/2 cup of juice. Combine the clementine, pomegranate, and lemon juice with the limoncello. Add the champagne and sugar and mix. Serve immediately with ice, or cover for a maximum of thirty minutes before serving.
